At The Cookery, we decided to complete the certification because we felt that the application process would provide us with a useful tool to help us analyze ways in which we are already sustainable as well as new practices and initiatives that could be implemented to lessen our environmental footprint. Although you can certainly "green" your business without this certification, the application process prompts you to think of new avenues to become more sustainable and it is also unique in that it encourages you to educate your staff and customers of the certification and your initiatives.
